Lean Cuisine meets Lean Technology

At Vapiano a lean, compact technology goes hand in hand with healthy, light cuisine. Aromatic herbs on the tables and in glass cases are an invitation to the guest to add the finishing touch to the crisp, fresh Italian delicacies. The Mangelberger standardised technology, which is customised to Vapiano's requirements, gives the staff extra time to devote to the well-being of their guests. The core of the technology is the EMS, or Energy Management System, specially developed for the centralised control of the restaurant's power consumption. It operates interior and exterior lighting, dimming effects, energy management and HACCP monitoring.

The unpredictability of electricity, oil and gas prices made controlled power consumption a vitally important factor in Vapiano's decision to use the system. Advance settings, for example the automatic connection and regulation of interior and exterior lighting, or the graduated connection of high-performance kitchen appliances, make it possible to reduce operating costs by another 20%.
