Refrigerated shelves in a supermarket with HACCP monitoring

HACCP

monitoring for cold rooms and refrigerated cabinets

We help our customers keep a cool head: our HACCP monitoring is part of the electrical standard at Norma, Netto, Yorma’s, ALDI and L’Osteria, for example – in all new national and international stores.

The advantage: a temperature monitoring system for cold rooms and refrigerated cabinets that is independent of the refrigeration equipment manufacturer. With us, it is integrated directly into the electrical distribution board and already established in more than 6,000 stores worldwide.

Freezer cabinets in a store whose temperatures are recorded by HACCP monitoring

Stay cool.

With HACCP monitoring.

Our HACCP configuration records the temperatures inside cold rooms, refrigerated shelves, chest freezers and refrigeration units. We also collect information such as defrost cycles of the refrigeration systems and door opening cycles. Specially developed simulation probes allow all relevant values to be interpreted close to core temperature.

Measurements are taken at up to 128 different measuring points, divided into individual lines such as cold rooms, refrigerated shelves, fridges, chest freezers or refrigerated superstructures.

Depending on the application, the measuring interval is between 15 seconds and 15 minutes. The data can be viewed either via app or dashboard. It is stored for four years on an SD card in the switchgear that is accessible to the customer.

Borderline?

We’ll report it.

Both an approach to and an exceedance of a limit value can be reported. As required, this alert can be given visually and acoustically with a plain-text display directly in the store. Or digitally via our database. The customer decides when the alarm is triggered (preventively or event-driven).

Dean & David

Refreshingly simple

For Dean & David in Nuremberg, we designed an electrical distribution board that delivers exact HACCP data. Irregularities are reported automatically via app. This ensures that everything is always nice and fresh – without wasting energy unnecessarily.

Best hand in hand.

In general, we recommend – for all the digitalisation – not switching off common sense: whether a chest freezer is iced up or a refrigerated shelf is stocked correctly is still best seen with your own eyes.

The overarching HACCP documentation, in turn, detects what sometimes remains hidden from the eye. Perhaps a refrigerated cabinet only just reaches the required temperature? Then the thing could soon fail. Is a single chest freezer wrongly connected and switched off with the lighting every evening? Maybe nobody notices. Our HACCP … does.

Frequently asked questions about HACCP in stores

What is the HACCP principle?

HACCP stands for “Hazard Analysis and Critical Control Points”. The principle serves to identify potential risks to food safety at an early stage and to control them at decisive points in the production process. To this end, critical control points are defined, monitored and documented so that food can be produced, transported and stored safely.

What are the advantages of HACCP from Mangelberger?

Our HACCP module can read the values of integrated sensors. Or measure with its own sensors. This makes our HACCP independent of the equipment manufacturer, lets us combine equipment from different manufacturers in one overall system and turns even the most inexpensive equipment into smart equipment.

Does a health authority HACCP inspector receive all relevant data?

According to the guideline, an on-site inspector must be able to trace the temperature of every refrigerated cabinet in a 15-minute grid. To do this, the inspector can click from value to value, which is time-consuming. With our HACCP database login, the values of all connected refrigerated cabinets can be found in one overview. The inspector can request this from our customers’ head office.

How much time do employees save with digital HACCP?

We estimate that our digital HACCP monitoring reduces the effort for manual measurements by around 50 %.
